Working for clients that don't eat carbs at all - some of them also vegan or vegetarian - I am happy to serve dishes like this. The "Risotto" is creamy, the tabouleh is sour and sweet. Vegetarian or not (combine it with a steak!!!) the variety of vegetables shows its glory in dishes like this.

Tubers and roots just fit fine together. The earthy taste of beet root is perfectly balanced by the sweet taste of steamed kohlrabi. My recommendation: steamed kohlrabi in vegan beetroot-roux sauce with beetroot foam and fresh parsley, white sesame and black Hawaii salt.
